Mango and cashew mousse

I was looking for inspiration to make an original dessert that I could enjoy despite my lactose intolerance and healthy lifestyle when I came across this mango based recipe of Ella Woodward. I immediately knew I wanted to try making this. Since it’s a recipe with few ingredients, their quality is the key to success. Especially concerning the mangoes, it is important that they’re ripe and flavorful.

Ingredients for 4 people: 4 mangoes

170 g of cashew butter

20 drops of Dietetic

Peel the mangoes, cut around the pit and put the fruit in the blender together with the cashew butter. Blend until you obtain a sticky cream. Now add the Dietetic and mix again.

Pour the mousse into dessert glasses and refrigerate for 30 minutes. Serve with crushed cashew nuts.
