Cod fillet with marinated vegetables

Method of preparation
- Brown the onion in a pan with 2 tablespoons of oil. After browing keep it aside.
- Cut the zucchini and peppers into small cubes of about half a centimeter and boil for 60/90 seconds in lightly salted water, after which dip them in water and ice to stop the cooking process.
- Cut the tomatoes into small cubes.
- Put all the ingredients so far prepared (onion, zucchini and peppers) in a bowl along with all the other ingredients (fennel, olives, capers, chilli and thyme) in a container and season it with 4 tablespoons of oil.
Cod: cook the cod fillets in a hot frying pan with 2 tablespoons of extra virgin olive oil until it's browned on both sides.
Sauce: mix all ingredients for the sauce and heat the sauce in a saucepan for a few minutes.
Serving: put 2 tablespoons of sauce on the bottom, a cod fillet over the sauce and complete with pickled vegetables. Add salt and pepper, put the basil oil around and complete with thyme.
